Just baked these yummy from scratch Blueberry Muffins this morning and boy are they tasty!

Morning loves! As promised on Instagram, I'm sharing the recipe for the Easy One Pot Lasagna I made last night (see photo below). I've been trying to meal plan our dinners as much as possible and this week is the first week where I have a meal (with ingredients) all ready to go for each day. Well, with the exception of this evening since we'll be dining at Steve's mom's house for dinner (yay for a break!).

So far, I've made Chicken with Creamy Mushroom Sauce (go easy on the herbs if you've got a sensitive palate like me, no thanks to being pregnant), and I plan on making this Slow Cooker Potato and Corn Chowder tomorrow night. I cheated with the Pot Roast I made the other day using a sauce pouch. Lesson learned from that is to make Pot Roast the old fashioned way and just make it from scratch. Even though the sauce pouch was from The Fresh Market, which I think is a great grocery store, it just didn't cut it for us.

Because my taste buds have been uber sensitive during this pregnancy so far, I've had to really watch what I eat. Heartburn and acid reflux have been my #1 enemy and so it forces me to choose wisely as to what I intake, or else I'll be paying for it later. Which is where all of this meal planning comes into play. It has helped me so much knowing that what I'll be eating won't cause me pain, and it takes the stress out of figuring out what we're having for dinner. Because we all know when 4/5pm rolls around, we're all too tired/hungry/cranky to figure out what to make for dinner. I'm constantly pinning recipes for meal planning, so follow along if you want some inspiration!

Most tomato-based pasta dishes do cause me some level of heartburn, but I just couldn't resist this Easy One Pot Lasagna. And I am so glad I caved for it! My only comment about it is that the next time I make it, I'll be lessening the amount of ricotta cheese that you dollop on top. I know, sacrilege! But the amount in the recipe was just a tad too much for me and the hubby's liking.

  1. I find the idea of the one pot lasagna pretty interesting. While I don't eat meat, I am sure this would be delicious without the chicken as well. Those muffins surely do look yummy too!
